The innovative, young cuisine should always and at all times reflect the love of the craft of cooking and the processing of fresh, natural products that are grown as regionally as possible. Product ecology, i.e. cooking fresh and seasonal, producing with heart and without unnecessary waste, is the aim. Short transport routes are a matter of course.
